A Touch of Ginger

Ingredients

2 tbsp olive oil

2 chopped onions

2 tbsp minced ginger

2 tsp chili powder

1 1/2 tsp cumin

1 1/2 lbs sweet potatoes, peeled and cut in 1/2" pieces

2 cups orange juice

2 tbsp minced garlic

2 cans black beans, drained

2 poblano chiles, seeded, chopped

1 red bell pepper, chopped

salt and pepper to taste

Toppings (optional)

sour cream

avocado

orange wedges

Instructions

Heat olive oil in a stock pot. Add onions and saute 10 minutes, until tender.

Add ginger, chili powder and cumin, and saute and additional 2 minutes.

Add sweet potatoes, orange juice and garlic, and simmer for 10 minutes, or until potatoes are tender.

Add beans, poblanos, and bell pepper, and simmer another 15 minutes. Add salt and pepper to taste.
